Carne Asada Street Tacos
Citrus-marinated skirt steak, charred fast over high heat, piled onto warm corn tortillas with onion, cilantro, and lime.

Method
Marinate the steak with citrus, garlic and cumin for 30 minutes at room temperature.
Sear over a screaming-hot grill or cast-iron pan for 2 minutes a side until charred.
Rest, then slice against the grain.
Warm the tortillas, top with steak, onion, cilantro and a squeeze of lime.
