Tacos al Pastor
Pork shoulder marinated in achiote and pineapple, sliced thin, and tucked into tortillas with fresh pineapple.

Method
Toast and rehydrate the chilies, then blend with achiote, pineapple juice, garlic and oregano.
Marinate the pork for at least 4 hours.
Sear in a hot skillet until the edges crisp.
Pile onto tortillas with diced pineapple, onion and cilantro.
