Crispy Chorizo Quesadillas
Buttery flour tortillas folded around chorizo, melted Oaxaca, and pickled onion -- griddled until golden.

Method
Crumble and brown the chorizo in a skillet until crisp; drain.
Lay a tortilla in a buttered hot skillet; top with cheese, chorizo, onion, and another tortilla.
Cook until deeply golden, then flip and finish the other side.
Cut into wedges and serve with hot sauce and lime.
