Method

  1. Rub the pork with salt, brown sugar and paprika; rest overnight.

  2. Smoke at 225 F until the internal temperature hits 203 F, about 8 to 9 hours.

  3. Rest 45 minutes, then pull into shreds.

  4. Toss with vinegar, pepper flakes and black pepper; pile on buns with slaw.
