St. Louis Spare Ribs
Trimmed spare ribs rubbed in coffee and chili, smoked until tender, finished with a tangy tomato glaze.

Method
Coat ribs with mustard, then the coffee-spice rub; chill 2 hours.
Smoke at 225 F for 5 hours until bones loosen.
Combine bbq sauce with vinegar; brush on the ribs.
Return to the smoker for 20 minutes until the glaze sets; slice between the bones.
