Sashimi Selection
Tuna, salmon, and yellowtail sliced clean and served with shiso, daikon, and soy.

Method
Chill the fish thoroughly, then slice with a single pull of a very sharp knife.
Pile julienned daikon on each plate and lay sashimi over.
Tuck shiso leaves between pieces.
Serve with wasabi, ginger, and soy.
