Japanese Beef Curry
A thick, mildly spiced curry of beef, carrots, and potatoes -- comfort food in a bowl.

Method
Brown the beef in oil, then add the onions and saute until soft.
Add carrots, potatoes and broth; simmer 45 minutes until tender.
Stir in the curry roux and grated apple; simmer 10 more minutes until thick.
Spoon over hot rice and serve.
