Method

  1. Warm the olive oil with the garlic and chilies over medium-low heat until fragrant and lightly golden.

  2. Add the tomatoes and a pinch of salt; simmer hard for 12 minutes until thick.

  3. Cook the penne until just al dente and transfer with tongs into the sauce.

  4. Toss with parsley and a generous shower of Pecorino.
