Garlic, chili, and tomatoes simmered hard and fast for a fiery, glossy weeknight pasta.

Method
Warm the olive oil with the garlic and chilies over medium-low heat until fragrant and lightly golden.
Add the tomatoes and a pinch of salt; simmer hard for 12 minutes until thick.
Cook the penne until just al dente and transfer with tongs into the sauce.
Toss with parsley and a generous shower of Pecorino.
