Method

  1. Brine the chicken in buttermilk and hot sauce overnight.

  2. Dredge in seasoned flour, pressing the buttermilk into the flour for craggy bits.

  3. Fry at 325 F until deeply golden and 160 F internal, about 14 minutes.

  4. Drain on a rack and salt immediately.
