Method

  1. Brine chicken in buttermilk overnight.

  2. Dredge in seasoned flour and fry at 325 F until golden and 160 F internal.

  3. Whisk cayenne, paprika, brown sugar and a cup of the hot frying oil.

  4. Brush over the chicken and serve over white bread with pickles.
