Hand-pulled noodles in a chili-oil pork sauce with Sichuan peppercorn -- numbing, smoky, deeply savory.

Method

  1. Brown the pork with garlic until crisp at the edges; season with a splash of soy.

  2. Whisk chili oil, soy, vinegar and Sichuan pepper in the bottom of each bowl.

  3. Cook the noodles until just al dente; lift directly into the bowls.

  4. Top with the pork crumbles and a heap of scallions.
