Method

  1. Toss the beef with cornstarch and a splash of soy.

  2. Blanch the broccoli in salted water for 60 seconds; shock in ice water.

  3. Sear the beef in a screaming-hot wok until just cooked.

  4. Add garlic, ginger, broccoli and remaining sauces; toss for 60 seconds and serve over rice.
