Silky pork-and-shrimp wontons floating in a clear ginger-scallion broth.

Method

  1. Mix pork, shrimp, soy and sesame oil; fold a teaspoon into each wrapper.

  2. Simmer broth with ginger and a splash of soy; strain.

  3. Boil the wontons in salted water until they float, then transfer to bowls.

  4. Ladle hot broth over and shower with scallions.
