Butter Chicken

Tandoori-spiced chicken simmered in a velvety tomato-cream sauce with kasuri methi and a knob of butter.

Method

  1. Marinate chicken in yogurt, ginger-garlic and tandoori masala for at least an hour.

  2. Sear the chicken in a hot pan until charred at the edges; set aside.

  3. Simmer tomatoes with butter and ginger-garlic for 20 minutes, then blend smooth.

  4. Return chicken to the sauce with cream and kasuri methi; simmer 10 minutes more.
