Pad Thai with Shrimp
Springy rice noodles tossed with shrimp, peanuts, lime, and a tamarind-palm sugar sauce.

Method
Soak the noodles in warm water until pliable.
Sear shrimp in oil, then push aside; scramble the eggs in the empty spot.
Add noodles and the tamarind, fish sauce and palm sugar mixture; toss until coated.
Finish with peanuts, lime, and chili.
