Method

  1. Soak the noodles in warm water until pliable.

  2. Sear shrimp in oil, then push aside; scramble the eggs in the empty spot.

  3. Add noodles and the tamarind, fish sauce and palm sugar mixture; toss until coated.

  4. Finish with peanuts, lime, and chili.
