Thai Basil Chicken
Pad krapow gai -- a fiery, garlicky stir-fry of ground chicken and holy basil topped with a crispy egg.

Method
Smash garlic and chilies in a mortar.
Sear the chicken in a hot wok until just cooked.
Add the garlic-chili paste and sauces; toss until fragrant.
Off heat, fold in basil; serve over rice with a fried egg on top.
