Method

  1. Smash garlic and chilies in a mortar.

  2. Sear the chicken in a hot wok until just cooked.

  3. Add the garlic-chili paste and sauces; toss until fragrant.

  4. Off heat, fold in basil; serve over rice with a fried egg on top.
