Method

  1. Simmer stock with lemongrass and lime leaves for 10 minutes.

  2. Add mushrooms and shrimp; cook just until the shrimp curl.

  3. Stir in fish sauce, lime juice and chili paste off the heat.

  4. Serve with cilantro and an extra squeeze of lime.
