Lamb Gyro Bowl
Spiced ground lamb over lemon rice with cucumber, tomato, pickled onion, and a thick tzatziki.

Method
Brown the lamb with cumin, oregano and salt; drain excess fat.
Cook the rice with a squeeze of lemon and a pinch of salt.
Assemble bowls with rice, lamb, cucumber, tomato and pickled onion.
Top with a generous spoon of tzatziki.
