Buttermilk Pancakes with Maple Butter
Tall, golden pancakes with crisp edges and a soft interior, served with whipped maple butter.

Method
Whisk flour, sugar, baking powder and soda.
Beat buttermilk, eggs and melted butter; fold into the dry just until combined.
Cook 1/4-cup portions on a buttered griddle until bubbles form, then flip.
Whip butter with maple syrup and serve alongside.
